Regi Mathew was already well established as a Thai chef when he decided to take a risk and leave the Taj group. He enjoyed cooking Thai food, he said, but it was time to explore the cuisine of his native Kerala. Since then the journey has not always been smooth but at every venture he has undertaken, the excellence of Regi’s food has always stood out. More than any other chef he has taken the flavours of Kerala around the country. He now runs Kappa Chakka Kandhari, widely regarded as one of the best restaurants in Chennai with a successful branch in Bengaluru as well.
