Lakhan Jethani is part of a new breed of young and passionate Indian chefs who are bold enough to move beyond the realms of Indian food and experiment with global cuisines. Known amongst his peers as the Samurai Cook, he was fascinated by the Japanese approach to food and spent six months in Tokyo picking up skills and absorbing traditional techniques. When he returned to Mumbai he established Mizu, an authentic Izakaya-style restaurant, refusing to compromise on his menu and offering a taste of real Japanese cuisine.
