JP Singh has been the low profile chef of Bukhara, India’s most famous restaurant for several decades. He also oversees the Peshawari chain all over India. Though Bukhara’s menu is iconic and has not changed much since 1978, Singh experiments with new dishes at the Peshawaris.
Singh has spent his entire career at Bukhara, starting out as a junior chef before becoming the master of the tandoor and refining the marinades and the techniques.
