Jalebi caviar is perhaps one of the most innovative modern Indian restaurant desserts. Created at Masala Library, Mumbai, Zorawar Kalra’s culinary creativity comes alive in this unique dessert.
It may look like exotic caviar or salmon roe but, when you eat it, the unmistakable flavour of jalebi comes through. Right down to its sticky, chewy texture.
The caviar is served on top of a chilled pistachio rabdi, replicating the classic Indian combination of rabdi-jalebi.
